El Aguila - Espresso - Washed Coffee

This is a first time purchase of ours from the Red Associations project in the Valle del Cauca in Colombia. Founded in 2017 by Raw Material (an import company) the mill was founded to ensure farmers a minimum fixed price for their cherry each year despite massive fluctuations in the commodity price.

By buying larger volumes of coffee in a more direct manner Red Associations have doubled the house hold income of a typical producer in his area. Not only this the Mill has allowed them to create fantastic tasting lots by grouping together and using all of their coffee cherries. El Aguila is one these communal lots.

The flavour profile is classic Colombia super sweet, with citrus notes and a hint of berry. We love it!
