We have been buying coffees from Buziraguhindwa since 2013 and this will be our first ever natural processed lot.
Natural process at Buziraguhindwa is carried out like this. Cherries are soaked in water to remove floaters before being spread out on raised beds in a single layer for 2 days. During this time more sorting is carried out to remove over-ripes and underripes. When the layer is thin the coffee drys fast so after the initial 2 days the layers get built up and all the cherries are turned and moved multiple times per day.
The main harvest starts in March and peaks in May, with cherry being delivered daily to the washing station either on foot or bicycle. We received this coffee just before Christmas.
