Gikirima AB - Filter - Washed Coffee

Gikirima is a washing station in Kenya within the great coffee growing region of Embu County. Here the cherries are gathered by a large family of growers, about 1,100 of which are active members. Each farmer owns around 1 hectare of land for growing coffee among other things such as tea, bananas and maize.

Once at Gikirima, the ripe cherries are processed using a disc pulper and then fermented overnight to breakdown the sugars. It is then transported through channels to the soaking tank where it is cleaned and spread out on raised drying beds. Here it is carefully turned and monitored in order to evenly dry the coffee. Drying will take 7 to 15 days dependent on climate and the production size.

This is our final Kenyan of the year and we feel its flavour profile leads us nicely into this autumnal period, with notes of blackcurrant jam, cranberries and candied orange.
