Pedernales - Filter - Washed Coffee

This years Pedernales lot celebrates the work of two farmers and two farms. El Romerillo is 3.5 hectares in size and is located at 1850 masl, the owner is Helibrando Martinez. Las Pirias is quite a large farm, 9 hectares in size and even higher 1900 masl and is owned by Rosas Cruz Campos.

The micro lot takes it’s name from the local town which is in the famous region of Cajamarca. The purpose of creating this lot is to take the best two micro lots from the area to create a larger lot which will impact the farmers and help to promote specialty coffee in the area and here.

During picking, cherries are pulped on the same day before a 19 hour initial ferment. Then all the coffee is washed three more times in fresh water before being dried on raised beds.
