Veracruz - Espresso - Extended Fermentation Coffee

Finca Veracruz is an experimental farm within the Santa Barbara Estate - a group of 5 farms run by the Echavarria family in Colombia’s Antioquia region. Day to day runnings of the Estate are carried out by Pedro Echavarria. Pedro is a true pioneer in the Colombian coffee industry, when he is not at the farm you will find him supporting small producers across the country, exporting their coffee, milling others farmers coffees and roasting. The amalgamation of his work is Pergamino a café chain in Medellin showcasing Colombian coffee at its best.

Each Veracruz lot consists of 3 to 5 days’ pickings, where pulped beans are added to fermentation tanks along with the previous days’ pickings instead of keeping them separate. This longer fermentation highlights the coffee’s sweetness, whilst keeping the cup balanced.

This will be the fourth year we have bought Veracruz and the year would not be complete without it.
