We are delighted to be roasting this coffee again as last year it was one of our favourites. Don Alfonso takes it’s name from the owner of the Aquiares Estate, which is located on the rich slopes of the Turrialba Volcano. Aquiares Estate is famed for it’s quality which keeps us coming back for more each year.
Don Alfonso took over this farm in 1992 and prioritizes the welfare of his exceptionally skilled pickers who hand-pick only, the ripest cherries. It is Alfonso’s dedication to the farms workers that has now transformed the farm, region and lives.
This natural coffee has been hand picked from micro lots then immediately moved to the farms greenhouse patios for drying, where they are pre-dried for 2-3 days. They are then moved to African drying beds where the temperature is constantly maintained at 36 degrees celsius and slowly dried for 20-25 days. This slow regulated drying is what gives this coffee huge body with clean fermented flavours.
