This will be our final coffee from Burundi until the 2020 seasons coffees are picked. We are delighted to work Salum Ramadhan again and his fantastic coffees from the Kayanza region of northern Burundi.
Mbirizi Gatara, a combination of cherry from the village of Gatara, processed at the Mbirizi washing station. This particular lot appealed to us due to it’s slight tweak in the processing. The cycle goes like this. Cherry is first sorted before fermentation which due to the high altitude remains at a very regular temperature. Typically 12 hours of dry fermentation, then it’s re-graded before a 12- 18 soak in clean water. After this it is usually then put out in sunlight on raised beds for 15-20 days. Our lot has had the first 5 of those 15-20 of dying under shade. This will slow the drying process down giving a touch more depth and sweetness, while allowing for that coffee to be held in stock for longer without impacting the flavour profile, hence our last release for the year.
We adore coffees from Burundi and are delighted to end this seasons coffees with this particular lot.
