This coffee is a first for us in the roastery and we’re really excited to have been able to source some of this very special micro-lot from Cofinet. It comes from the farm Villarazo which is owned by Jairo Arcila, a third-generation coffee grower from Quindio who’s sons founded the export company Cofinet. Jairo bought his first farm, Finca La Esmeralda, in 1987 whilst working at Colombia’s second-largest exporter where he was their Mill Manager for over four decades, finally retiring from this role in 2019. During this time he was fortunate enough to have been able to buy five additional farms in the surrounding area, providing jobs to the local community and having an economic impact.

Jairo’s sons Carlos and Felipe provided a great understanding and expertise in the picking, sorting and processing of his coffees which enabled Jairo to showcase the coffees his farms produce.

Here we have a very experimental processing technique which we’ve never seen before and gives a really interesting flavour profile. The coffee was fermented in dry conditions for 24 hours and then placed in grain pro bags for 50 hours and kept at a temperature below 22 degrees. The coffee was then frozen for 72 hours and allowed to defrost on raised beds until ideal moisture content was reached.
