Finca San Francisco is a very large farm, with 294 hectares of farmland divided into smaller farming blocks called ‘tablones’. Growing conditions vary a lot between tablones for example the altitude ranges from lows of 1200 metres above sea level to highs of 1700.
The Salvarria family are something of a powerhouse in the Santa Ana region, the current generation is the 5th generation working in coffee. Currently working as farmers, millers and exporters. We’ve had coffees from three of their farms, Las Cruces, El Martillo and San Francisco, and from within San Francisco we have bought from some of the tablones that are pretty much farms in their own right such as Loma Linda and Pedregal. Over the years particularly since Andres Salaverria has been at the helm of the family business, quality has been getting better and better as it becomes the focus rather than volume commercial production.
This lot comes from one of the higher altitude ones that was planted with unusual varietals. Batian is a composite variety that mixes a number of different varieties most notably SL28, SL34 and Rume Sudan. It is a varietal that a lot of Central and South American producers are beginning to look to as it grows well at higher temperatures, lower altitudes and is resistant to coffee berry disease. All of this whilst still having a very good cup profile.
