For our collaboration with Oatly we have chosen a coffee from a producer who we have worked with a few times already this year. We discovered Juan Saldarriaga through our artist series project back in April and we were blown away by the quality of all his coffees.
This lot is a mix of Castillo and Colombia from the higher altitudes on his farm. The cherries are all hand picked, pulped and then dry fermented for 24 hours. This dry fermentation gives to the pulpy sweetness in the coffee. The cherries are then washed in clean water and then dried on raised beds for 25 days. We adore this coffee and we think it tastes amazing both in Oalty and black.
